OK. Let's get real.  Ice cream sandwiches are good.  Vegan/Gluten Free ice cream sandwiches are the bomb. Good for your soul, better for your body.  As Ashley McLaughin of Edible Perspective states it, it is quite literally like "taking a bite out of summer".  Ashley, I bow down.  Thank you for this recipe. Seriously.  Thank you. 
Vegan/Gluten Free
Peach Bourbon Ice Cream Sandwiches 
with Lemon Cornbread Cookies

| ingredients | 
five to six medium peaches, ripe
high heat oil + muscovado sugar for grilling
one, 13.5 ounce can of full fat coconut milk
1/3 cup brown rice syrup or coconut nectar
2-4 tablespoons muscovado sugar
2-3 tablespoons bourbon (gluten free)
2 teaspoons pure vanilla extract

freeze ice cream bowl
preheat grill to 400F, cut five peaches
in half and lightly brush with and sprinkle
the cut slides with muscovado sugar
grease your grill grates and grill peaches
until deep grill marks appear
flip and grill on opposite side
place on a plate and let fully cool in the fridge

place peaches, coconut milk, brown rice syrup
two tablespoons muscovado syrup
two tablespoons bourbon
and two teaspoons vanilla extract in a 
high powered blender, and blend until smooth

pour into a large saleable bag and squeeze excess air out
submerge in an ice bath until fully chilled
once chilled, pour into an ice cream maker and churn
until the ice cream collects on the sides
and  resemble a thick soft serve texture

scoop in a freezer safe container and pack down
place plastic wrap or parchment directly on top
of the ice cream, close the lid and freeze for  3-4 hours
place cookies in freezer on a baking sheet for one hour

tear pieces of parchment for each cookie sandwich
scoop 1/4 cup onto each cookie, place the cookie on top
then lightly squeeze.  scrape excess with a small
spatula around the edges. 
place the sandwich on its side at one end 
of the parchment, roll up, then twitch the ends together
place in the freezer, repeat with remaining cookies
freeze for a few hours before serving

and i thought i was cool last week for making vanilla ice cream and putting it between some chocolate chip cookies. wow!
