TASTE.45 | SHAVED BRUSSELS SPROUT SALAD VIA LOVE & OLIVE OIL

According to Love & Olive Oil, Brussels Sprouts are the new Kale and Pecorino is the Parmesan.  Hmmm.  Sounds divine and nutritionally packed to me. I've been on the hunt for simple salads as of late being that heavy dinners haven't felt too appealing. I'm certain once winter hits all that will go right out the window---but these days I'm loving recipes such as this delightful and simple salad.  Enjoy!

SHAVED BRUSSELS SPROUT  SALAD
APPLES + PECORINO

| ingredients |
3 tablespoons cider vinegar
2 tablespoons honey
1/4 cup of olive oil
salt  and freshly ground black pepper to taste
1 granny smith apple
15 ounces brussels sprouts
3 ounces pecorino romano cheese, finely grated

| directions |
whisk together cider vinegar and honey
drizzle in olive oil and whisk until combined
season to take with salt and pepper
core apple and into small cubes
or matchsticks, place in a small bowl
and toss with one tablespoon
of dressing to prevent the apples
from browning

trim ends of brussels sprouts
and remove any outer dmanaged leaves
using a mandoline slicer
slice sprouts as thinly as possible
discard ends and any core pieces or chunks
place shaved sprouts in a large bowl
toss with apples and remaining dressing

set aside for at least fifteen minutes
divide salad among serving dishes
and top with a healthy sprinkle of grated pecorino
