Confession.  Any type of food that was once fried and now has 'bake' in front of it, I love.  Especially zucchini chips.  Being that zucchini is one of my favorite foods, I died over these delicious Baked Zucchini Chips brought to you by Marissa from The Boot.  Marissa writes a lovely blog about Food, Love + Life in Italy--her taste is exquisite and her life in Barletta brings wonderful recipes while making you day dream about how lovely it would be to live on the southeast coast of such a beautiful country.  A match made in heaven in my book.   Enjoy!

| ingredients | 
1 zucchini, sliced in large rounds
1/4 cup of milk
1/4 cup panko bread crumbs
2 tablespoons plain bread crumbs
2 generous tablespoons of grated cheese
1/4 teaspoon salt + pepper
sprinkle of cayenne powder

| directions | 
preheat over to 425  degrees
pour the milk in one small bowl
and both batches of bread crumbs
cheese, cayenne  
salt and pepper in another bowl
dip the zucchini rounds 
in the milk, then the crumbs mixture
pressing down to adhere the crumbs
to the zucchini
place on a wire rack
coated with cooking spray
on top of a cookie sheet 
and bake for thirty minutes
