There's one little thing that tends to upset me about January because I feel it puts unnecessary pressure on people.  The need to cut everything "sweet" out of your diet--all at once.  I understand that it's the new year and people pledge to change this and change that---and as I've said before---change it good but change also takes time.  Cold turkey is not good.  It will make you crazy.  I'm a firm believer in moderation and eating favorite foods in moderation should not have to drastically change in January.  I feel that deprivation is the key to failure and failure leads to guilt and guilt leads to binging and so on and so on.  So while you are juicing it up, cutting "bad" foods out of your diet and drinking only water with lemon---take time to enjoy your favorite treats now and again.  These Fleur de sel Caramels from Love + Cupcakes are the perfect size and sweetness that will cure that killer craving in the most unbelievable way.  Enjoy.


| ingredients | 
1 cup of heavy cream
5 tablespoons unsalted butter
1 teaspoon fleur del sel
1 1/2 cups sugar
1/4 cup light corn syrup
1/4 cup water
| directions | 
line bottom and sides 
of an eight inch square baking
pan with parchment paper
then lightly oil the parchment
bring cream, butter, and fleur de sel 
to a boil in a small saucepan
then remove from heat
and set aside

boil sugar, corn syrup, and water
in a three to four quart 
heavy saucepan, remove from heat
and set aside

carefully stir in cream mixture
simmer, stirring frequently
until caramel registers
248F on thermometer
pour into baking pan 
and cool for two hours

cut into one inch pieces
then wrap each piece  
in a four inch square of wax paper
twisting the ends to close

They are delicious! I made some as gifts over the holidays and a batch for our home. I really do think they work for cravings :)
