Blackberry, lime and cheesecake?  I'm not quite certain I've heard three words that go more perfectly together these.  Sounds delicious, no?  Found on the lovely blog, Simple Bites, these popsicles are an ideal treat to devour during the remaining days of summer and surprisingly--much easier to whip together than they look.  Enjoy.


| ingredients | 
12 ounces of fresh blackberries
1 1/2 tablespoon water

6 ounces of cream cheese
4 tablespoons milk
2 tablespoons of fresh lime juice
1/2 teaspoon lime zest
1 1/2 teaspoon vanilla extract
1/2 cup powdered sugar
| directions |
add blackberries and water
to a medium saucepan
cook over medium heat for  
ten to fifteen minutes, add sugar 
to sweeten

pour berry mixture into  blender
puree until smooth
cover and refrigerate  

beat cream cheese, milk and lime juice
vanilla and sugar 
with a hand mixer
cover and refrigerate until cool

to assemble popsicles
layer blackberry puree and cream cheese
into popsicle molds
place popsicle sticks in the center
and freeze until solid
