I was beyond thrilled to come across this recipe by mowielicious because churros are one of B's favorite treats. Having also recently tried the more upscale version at La Boca in Santa Fe, it's awesome to see they aren't just a guilty pleasure fair food only to be enjoyed once or twice a year.  Even though they are super simple to follow--they are best attempted when you have a long afternoon to make a delicious mess.  Enjoy. 

churros with chocolate dipping sauce
| ingredients | 
75g butter
250ml water
140g flour, sifted
1/4 tsp salt
3 eggs
1 litre sunflower oil

2tbsp caster sugar
1tbsp ground cinnamon
1 vanilla pod

200g dark chocolate
200ml double cream
4 tbsp golden syrup
| directions | 
heat butter with water
in a non-stick pan until boiling
pour in salt and flour mix vivaciously until 
ingredients form a ball remove from heat
add eggs mix until smooth and thick
fit piping bag with star shaped nozzle
fill with batter

heat oil in  large non-stick pan  
until oil reaches 170 degrees

mix sugar-cinnamon-vanilla seeds
on a large plate
heat chocolate dip
double cream and golden syrup
in a small non stick pan
stir gently until melted and glossy
set aside

gently pipe 10-15cm 
lengths of batter into  the oil
fry for 1-2 minutes on each side
remove with slotted spoon
drain on wax paper

roll churros in the cinnamon
sugar while warm
