Almond Apricot Tarts

| ingredients | 
1/3 cup sugar
2/3 cup slivered almonds, slightly toasted
6 tablespoons butter
1 egg
1/4 teaspoon vanilla extract
1/4 teaspoon almond extract
1 1/2 tablespoons flour
1 sheet frozen puff pastry, thawed
6 fresh apricot halves
1/4 cup whole almonds

| directions | 
preheat oven to 425 degrees F
to make the frangipane, place almonds and sugar
in a food processor and grind until sandy
add butter, continue mixing, add egg
vanilla and flour mix until smooth

make the tart on a floured work surface
passing the rolling pin over the pastry and flatten

place in muffin pan, spread almond frangipane 
in center of each tart leaving one inch border
firmly place the apricot halves into the frangipane
dot with whole almonds
bake until golden brown

this looks exactly like a portuguese dessert that i love called pastel de nata. so good!

yum! i don't think you could ever go wrong with anything apricot and almond-y. i will have to look up pastel de nata very soon!
